Recipe story
This recipe combines the Eastern European tradition of preserving frozen meat for winter with the American innovation of BBQ glaze, developed in Southern kitchens. In the 19th century, along the Mississippi, smoked meat was glazed with sweet and tangy sauces, and today this technique is quickly applied in the air fryer.
