These protein-rich egg cups are not only quick and easy to make but are also versatile enough to serve as a hearty breakfast or a light snack.

Ingredients:

– 6 eggs; – 2 tbsp cream; – ½ tsp salt; – ½ tsp ground black pepper; – 30g crispy bacon, crumbled; – 30g mozzarella, grated; – 30g cheddar cheese, grated; – 40g green peppers, chopped; – 40g red peppers, chopped; – 25g spring onions, chopped.

Instructions:

1. Preheat your air fryer to  300°F. 2. Spray ramekins or small baking cups with vegetable oil cooking spray.

3. In a large mixing bowl, whisk together the eggs, cream, salt, and black pepper until well combined. 4. Stir in the chopped red and green peppers, spring onions, grated cheddar and mozzarella cheeses, and crumbled bacon until everything is evenly distributed.

5. Spoon the egg mixture into the prepared ramekins, filling them up to the top. 6. Place the ramekins in the air fryer basket and cook for 12-14 minutes, or until the eggs are set and the tops are slightly golden.
