🥘 Ingredients

cup (200 g) rice — 1 (7 oz)
cups water — 1.5 (12 fl oz)
olive oil — 2 tbsp (1 fl oz)
onion, chopped — 1
red bell pepper, diced — 1
cup frozen corn — 1 (5.3 oz)
cup cooked black beans — 1 (6 oz)
teaspoon chili powder — 1
teaspoon ground cumin — 1
teaspoon garlic powder — 1/2
salt to taste
lime — 1
avocado — 1
sour cream for serving (optional)

👨‍🍳 Steps

1Set the Ninja Foodi to Sauté function. Sauté the chopped onion and diced red bell pepper in olive oil for 3 minutes.
2Add the rice and stir for 1 minute. Pour in the water, chili powder, cumin, garlic powder, and salt.
3Close the lid, set the valve to seal, and pressure cook for 5 minutes.
4Quick release the pressure. Open the lid and fluff the rice with a fork. Gently fold in the frozen corn and cooked black beans.
5Optional: Activate the Air Crisp function at 400°F (200°C) and cook for 4-5 minutes to get a crispy top layer.
6Serve with sliced avocado, a squeeze of lime juice, and sour cream (if desired).
