🥘 Ingredients

tablespoon olive oil — 1 (15 ml)
medium onion, chopped — 1
garlic cloves, minced — 3
bell pepper, diced — 1
medium carrots, diced — 2
zucchini, diced — 1
can (15 oz) black beans, drained and rinsed — 1 (400 g)
can (15 oz) kidney beans, drained and rinsed — 1 (400 g)
can (15 oz) diced tomatoes — 1 (400 g)
cup (8 fl oz) vegetable broth — 1 (240 ml)
tomato paste — 2 tablespoons (30 ml)
teaspoons chili powder — 2
teaspoon ground cumin — 1
salt and pepper to taste

👨‍🍳 Steps

1Set the Ninja Foodi to Sauté function. Add olive oil and cook chopped onion and garlic for about 3 minutes until softened.
2Add diced bell pepper, carrots, and zucchini. Cook for 5 minutes, stirring occasionally.
3Stir in drained black beans and kidney beans, diced tomatoes, vegetable broth, tomato paste, chili powder, and cumin. Mix well.
4Close the lid, set the valve to seal, and pressure cook on high for 10 minutes.
5Quick release the pressure carefully. Season with salt and pepper to taste.
6Serve hot, optionally with sour cream or avocado.
