can black beans — 1 (15 oz)
can kidney beans — 1 (15 oz)
can cannellini beans — 1 (15 oz)
cup edamame (optional) — 1/2 (2.6 oz)
onion, finely chopped — 1 medium (5.3 oz)
bell pepper, diced — 1 (5.3 oz)
can diced tomatoes (14.5 oz) — 1
fajita seasoning — 2 tbsp (1 oz)
chili powder — 1 tbsp (0.5 oz)
ground cumin — 1 tsp (0.1 oz)
vegetable broth — 1 cup (8 fl oz)
olive oil — 1 tbsp (0.5 fl oz)
salt and pepper to taste

👨‍🍳 Steps

1Set Ninja Foodi to Sauté mode. Add olive oil and sauté onion and bell pepper for 3 minutes.
2Stir in fajita seasoning, chili powder, and cumin. Cook for 30 seconds.
3Add black beans, kidney beans, cannellini beans, diced tomatoes, and vegetable broth. Mix well.
4Close the lid, set valve to seal, and cook on high pressure for 10 minutes.
5Allow natural pressure release for 5 minutes, then quick release remaining steam.
6Season with salt and pepper. Serve with sour cream and avocado.
