1Preheat air fryer to 375°F (190°C) for 3 minutes.
2In a bowl, toss sweet potatoes with coconut oil, salt, and curry paste. Transfer to air fryer basket and cook for 10 minutes, shaking halfway.
3Meanwhile, in a skillet, sauté onion in a little oil until soft. Add garlic and ginger, cook 1 minute.
4Add coconut milk, vegetable broth, and chickpeas. Simmer for 5 minutes.
5When sweet potatoes are done, add them to the skillet along with spinach. Stir until spinach wilts.
6Serve hot with rice or naan bread.
