Quick Sweet Potato Curry in Air Fryer

🥘 Ingredients

large sweet potatoes, cubed — 2 (about 1 lb / 450 g)
can (13.5 oz / 400 ml) coconut milk — 1
onion, chopped — 1
garlic cloves, minced — 3
teaspoon grated ginger — 1
red curry paste — 2 tablespoons
can (15 oz / 400 g) chickpeas, drained and rinsed — 1
cups fresh spinach — 2 (about 2 oz / 60 g)
cup vegetable broth — 1/2 (4 fl oz / 120 ml)
tablespoon coconut oil — 1
salt to taste

👨‍🍳 Steps

1Preheat air fryer to 375°F (190°C) for 3 minutes.
2In a bowl, toss sweet potatoes with coconut oil, salt, and curry paste. Transfer to air fryer basket and cook for 10 minutes, shaking halfway.
3Meanwhile, in a skillet, sauté onion in a little oil until soft. Add garlic and ginger, cook 1 minute.
4Add coconut milk, vegetable broth, and chickpeas. Simmer for 5 minutes.
5When sweet potatoes are done, add them to the skillet along with spinach. Stir until spinach wilts.
6Serve hot with rice or naan bread.
