1Finely chop the green onion and red bell pepper.
2In a large bowl, mix the chopped vegetables with half of the mozzarella.
3Crack the eggs into the bowl, then season with salt and pepper to taste.
4Mix everything well until a homogeneous mixture forms.
5Line the air fryer basket with parchment paper and spray with cooking spray.
6Pour the egg mixture evenly into the basket.
7Preheat the air fryer to 180°C (350°F).
8Place the basket in the air fryer and cook for 10 minutes.
9Carefully remove the basket and sprinkle the remaining mozzarella on top.
10Continue cooking for another 6–10 minutes, until the surface is lightly golden and the center is set.
11Let the frittata rest for a few minutes before slicing and serving.
