🥘 Ingredients

ground pork — 500 g (1.1 lb)
large red potato (about 250 g), grated — 1
red onion, grated — 1
large garlic cloves, grated — 2
teaspoon cumin seeds — 1
teaspoons smoked paprika — 2
teaspoon dried chili flakes — 1
fresh parsley, finely chopped — 25 g (0.9 oz)
a little olive oil (for spraying)
bulgur (or couscous) — 150 g (5.3 oz)
tablespoon olive oil (for salad) — 1
lemon, cut into 6 wedges — 1
½ cucumber, diced
tomatoes, chopped — 4
fresh mint or cilantro, chopped — 2 tablespoons
whipped feta, tzatziki or hummus — 200 g (7 oz)

👨‍🍳 Steps

1Place bulgur in a bowl and pour 300 ml (1.25 cups) boiling water over it. Cover and let sit for 15-20 minutes until hydrated.
2Preheat air fryer to 190°C (375°F). In a large bowl, mix ground pork with potato, onion, garlic, cumin, paprika, chili flakes, parsley, salt and pepper to taste.
3Shape the mixture into 8 elongated meatballs (like small sausages). Place in air fryer basket, spray with olive oil, and cook for 15-18 minutes at 190°C (375°F), turning halfway.
4For the salad, add olive oil and lemon juice to the hydrated bulgur. Mix well, then fold in diced cucumber, tomatoes, and fresh herbs.
5Serve hot kefta with bulgur salad and whipped feta, tzatziki or hummus.
