🥘 Ingredients

long-grain rice — 300 g (10.6 oz)
olive oil — 1 tablespoon
onion, chopped — 1/2
garlic cloves, minced — 2
canned diced tomatoes — 1/2 cup (120 ml)
vegetable broth — 1.5 cups (360 ml)
ground cumin — 1 teaspoon
chili powder — 1/2 teaspoon
sweet paprika — 1/2 teaspoon
salt — 1/2 teaspoon
bell pepper, diced — 1
frozen corn — 1/2 cup (80 g)
fresh parsley for garnish — to taste

👨‍🍳 Steps

1Set Ninja Foodi to Sauté mode. Add olive oil and cook onion and garlic for 2 minutes until softened.
2Add rice and cook for 1 minute, stirring constantly, until lightly golden.
3Pour in diced tomatoes, vegetable broth, cumin, chili powder, paprika, and salt. Stir well.
4Close the lid, set valve to sealing position, and pressure cook on HIGH for 5 minutes.
5Quick release pressure. Open lid, add diced bell pepper and frozen corn. Stir gently, then let sit uncovered for 3 minutes.
6Serve warm, garnished with fresh parsley.
