🥘 Ingredients

cherry tomatoes (halved) — 225 g (8 oz)
zucchini (cubed, about 2 cups) — 250 g (9 oz)
red onion (sliced, 1 cup) — 100 g (3.5 oz)
minced garlic — 3 tablespoons
small bell peppers (any color, cubed) — 2
olive oil — 2 tablespoons
Italian seasoning — 1 tablespoon
Kalamata or green olives (halved, 1/2 cup) — 60 g (2 oz)
salt and pepper to taste
For dressing:
fresh parsley chopped — 2 tablespoons
extra virgin olive oil — 3 tablespoons
juice of 1/4 lemon
a pinch of salt

👨‍🍳 Steps

1Preheat the air fryer to 200°C (400°F) for 5 minutes.
2In a large bowl, mix cherry tomatoes, zucchini, red onion, minced garlic, bell peppers, 2 tablespoons olive oil, Italian seasoning, salt, and pepper.
3Transfer the vegetable mixture to the air fryer basket and cook for 10–12 minutes, shaking the basket every 4 minutes for even browning.
4Meanwhile, prepare the dressing: in a small bowl, mix chopped parsley, 3 tablespoons olive oil, lemon juice, and a pinch of salt.
5Once the vegetables are browned, remove them from the air fryer, drizzle with dressing, toss gently, and serve immediately. Optional: toss with cooked penne pasta for a more substantial meal.
