🥘 Ingredients

tablespoon olive oil — 1 (15 ml)
chopped onion — 1 medium
carrots, diced — 2 medium
celery stalks, diced — 2
bell pepper, diced — 1
small cabbage, chopped — 1/2
can (14 oz) diced tomatoes — 1 (400g)
vegetable broth — 3 cups (750 ml)
bay leaf — 1
teaspoon dried thyme — 1
salt and pepper to taste
fresh parsley for serving — as needed

👨‍🍳 Steps

1Set the Ninja Foodi to Sauté function. Add olive oil and cook onion, carrots, and celery for 4-5 minutes, stirring occasionally.
2Add bell pepper and cabbage; cook for another 2 minutes.
3Pour in diced tomatoes, vegetable broth, bay leaf, and thyme. Stir well.
4Close the lid and pressure cook on high for 8 minutes. Quick release pressure when done.
5Carefully release pressure, remove lid, and discard bay leaf. Season with salt and pepper to taste.
6Serve hot, garnished with fresh parsley.
