🥘 Ingredients

zucchini — ½ piece (approx. 150g / 5.3 oz)
mushrooms — 125g (4.4 oz)
eggplant — ½ piece (approx. 150g / 5.3 oz)
red bell pepper — 1 piece
red onion — 1 piece
olive oil — 2 tablespoons (30 ml / 1 fl oz)
dried Italian herbs — 1 tablespoon

👨‍🍳 Steps

1Clean the mushrooms, then wash the zucchini and bell pepper.
2Cut the bell pepper, zucchini, and eggplant into small pieces about 1 cm (0.4 in).
3Cut the mushrooms in half.
4Cut the red onion into large pieces to prevent burning.
5Place all cut vegetables in a bowl. Add olive oil and Italian herbs. Mix well to coat evenly.
6Transfer the Italian vegetables to the air fryer basket. Cook at 190°C (375°F) for 10–12 minutes, shaking halfway through.
