🥘 Ingredients

rabbit (approx. 1.2–1.5 kg), cut into pieces — 1
garlic cloves, minced — 3
teaspoons fresh rosemary, chopped (or 1 tsp dried) — 2
teaspoon fresh thyme, chopped (or ½ tsp dried) — 1
zest and juice of 1 lemon
olive oil — 3 tablespoons
salt, to taste
pepper, to taste
red pepper flakes (optional), to taste

👨‍🍳 Steps

1In a large bowl, mix together minced garlic, rosemary, thyme, lemon zest and juice, olive oil, salt, pepper, and red pepper flakes (if using).
2Add rabbit pieces and toss well to coat evenly with the marinade. Cover the bowl and marinate for at least 1 hour, preferably overnight in the refrigerator.
3Preheat the air fryer to 190°C (375°F).
4Remove rabbit pieces from the marinade, shaking off excess. Let them come to room temperature for about 20 minutes.
5Place pieces in a single layer in the air fryer basket (work in batches if necessary).
6Cook for 15–20 minutes, turning pieces halfway through, until golden and internal temperature reaches 74°C (165°F).
7Remove and serve immediately with your favorite side dish.
