Halloween Stuffed Peppers in Air Fryer

A quick and delicious recipe for stuffed peppers with meat and rice, cooked in an air fryer, with a scary jack-o'-lantern look, perfect for Halloween.

🥘 Ingredients

orange bell peppers — 2
ground beef (or vegetarian alternative) — 250 g (9 oz)
cooked rice — 100 g (1/2 cup)
medium onion — 1
garlic clove — 1
shredded cheese (Emmental or cheddar) — 100 g (1 cup)
tablespoon tomato paste — 1
teaspoon smoked paprika — 1
salt — to taste
black pepper — to taste
black olives (for eyes) — a few

👨‍🍳 Steps

1Cut off the tops of the orange bell peppers and remove the seeds. Carve a scary jack-o'-lantern face into each pepper, removing the inner membranes.
2In a skillet over medium heat, sauté the chopped onion and minced garlic in a little oil. Add the ground beef (or vegetarian alternative) and cook until browned.
3Stir in the cooked rice, tomato paste, and smoked paprika. Season with salt and pepper and mix well.
4Fill each pepper with the rice and meat mixture, pressing gently. Sprinkle the shredded cheese on top.
5Place the stuffed peppers in the air fryer basket. Cook at 180°C (350°F) for 15–20 minutes, until the cheese is melted and golden.
6Just before serving, add two black olives to each pepper to simulate eyes and achieve the Halloween effect.
