1Peel the potatoes and cut them into sticks about 0.5 cm thick (julienne or with a potato cutter).
2Rinse the sticks, then soak them in cold water with 1 tablespoon of salt for at least 30 minutes (or overnight in the fridge).
3Drain the water, rinse the potatoes again, and dry them very well with paper towels – the drier they are, the crispier they will be.
4Drizzle with oil and toss well to coat evenly.
5Place them in the air fryer basket and cook at 200°C (390°F) for 25–30 minutes. Shake the basket every 5–10 minutes for even cooking. Sprinkle with additional salt to taste and serve immediately.
