eggs — 2
Greek yogurt (10% fat) — 350 g (12.3 oz)
sugar — 40 g (1.4 oz)
packet Bourbon vanilla sugar — 1
teaspoon grated lemon or orange zest — 1
teaspoon baking powder — 1
pinch of salt — 1
teaspoon cinnamon — 1/2
large apples (Jonathan, Idared or Granny Smith) — 2
raisins (optional) — 2 tablespoons
all-purpose flour (type 000) — 200 g (7 oz)
oil for frying (as needed)
vanilla powdered sugar for decoration (to taste)

👨‍🍳 Steps

1In a bowl, beat the eggs with salt, sugar, and Bourbon vanilla sugar until smooth. Add Greek yogurt and citrus zest, mixing well.
2Sift the flour together with baking powder and cinnamon, then gradually incorporate it into the mixture, stirring gently just until combined – do not overmix.
3Add the diced apples and drained raisins, stirring delicately. The batter should be thick but pourable.
4For air fryer: Pour the batter into small silicone molds or onto parchment paper. Place in the air fryer at 180°C (350°F) for 10–12 minutes.
5After baking, let the donuts cool for 2–3 minutes, then generously sprinkle with vanilla powdered sugar.
