Simple preservation recipe for fresh mushrooms by dehydrating in an air fryer, keeping flavor and texture.

🥘 Ingredients

fresh mushrooms (champignon, shiitake or oyster) — 500 g (1.1 lb)
a few sprigs of thyme or rosemary (optional)

👨‍🍳 Steps

1Clean mushrooms with a soft brush or damp cloth. Do not wash with water as they absorb moisture.
2Slice mushrooms thinly, about 3-5 mm thick.
3Preheat air fryer to 60°C (140°F).
4Place mushroom slices in a single layer in the air fryer basket, without overlapping.
5If desired, add thyme or rosemary for extra flavor.
6Dehydrate for 2 to 4 hours at 60°C (140°F), checking every 30 minutes and shaking the basket gently.
7Mushrooms are ready when they become brittle and show no signs of moisture.
8Let them cool completely, then store in an airtight jar in a dry, dark place.
