whole duck (approx. 1.5–2 kg / 3.3–4.4 lb) — 1
sea salt — 2 teaspoons
ground black pepper — 1 teaspoon
garlic powder — 1 teaspoon
dried thyme or rosemary — 1 teaspoon
honey — 2 tablespoons
soy sauce — 1 tablespoon
👨🍳 Steps
1If the duck is frozen, thaw it in the refrigerator at least 24 hours ahead. Rinse and pat very dry with paper towels.
2Score the skin in a diamond pattern without cutting into the meat. Season generously on all sides with salt, pepper, garlic powder, and thyme.
3Preheat the air fryer to 190°C (375°F).
4Place the duck in the basket breast side down. Cook for 25–30 minutes to render fat and brown the skin.
5Turn the duck breast side up. Increase temperature to 200°C (400°F) and cook for another 20–30 minutes, until internal temperature in the thigh reaches 74°C (165°F).
6Optional: Mix honey with soy sauce; brush the duck with this mixture during the last 5 minutes for a glossy glaze.
7Remove the duck and let it rest for 10–15 minutes before carving and serving.
