🥘 Ingredients

chicken drumsticks, thawed — 10 pieces
grated Parmesan — 30 g (1/4 cup)
arrowroot flour — 90 g (3/4 cup)
cornstarch — 45 g (1/3 cup)
turmeric — 1/2 tbsp
sweet paprika — 1 tbsp
cayenne pepper — 1/2 tsp
garlic powder — 1 tbsp
onion powder — 1 tbsp
black pepper — 1/2 tsp
brown sugar — 2 tsp
salt — 1 tsp
dried thyme — 1/2 tbsp
whole milk — 240 ml (1 cup)
olive oil spray, for greasing

👨‍🍳 Steps

1Pat the chicken drumsticks dry with paper towels, then submerge them in milk and let soak for at least 10 minutes (ideally overnight).
2In a bowl, mix Parmesan, arrowroot flour, cornstarch, and all spices. Coat each drumstick in the dry mixture, covering well.
3Place drumsticks in the air fryer basket, leaving space between them. Spray generously with olive oil spray.
4Cook in the air fryer at 199°C (390°F) for 10 minutes. Turn drumsticks and spray again with oil. Cook for another 10 minutes, then turn again and cook for 5 more minutes.
5Check that internal temperature reaches at least 74°C (165°F). Serve immediately.
