potatoes (preferably Maris Piper or Russet), grated — 500g (1.1 lb)
white onion or shallot, finely chopped — 1/2
garlic clove, crushed — 1
teaspoon sweet paprika — 1
teaspoon coarse salt — 1/2
teaspoon dried oregano — 1
egg — 1
self-rising flour — 4 tablespoons

Grate the potatoes and squeeze out as much water as possible. Place in a large bowl.

Add finely chopped onion, crushed garlic, paprika, oregano, and salt. Mix well.

Add the egg and self-rising flour. Mix until you get a mixture that is easy to shape – not too wet or sticky.

Form 4 hash browns (or 6 thinner ones). Lightly wet your hands to prevent sticking.

Cook in the air fryer at 200°C (400°F) for 10 minutes, then flip and cook for another 10 minutes, until golden and crispy.
