skinless cod fillets — 450 g (1 lb)
green onions, finely chopped — 2
teaspoon minced garlic — 1/2
Panko breadcrumbs — 60 g (1/2 cup)
teaspoon salt — 1/4
teaspoon black pepper — 1/8
fresh parsley, chopped — 4 tablespoons
beaten eggs (for coating) — 2
cornmeal (or extra breadcrumbs, for coating) — 60 g (1/2 cup)
lemon wedges (for serving) — 2

👨‍🍳 Steps

1Pat the cod fillets dry with paper towels. Place them in a food processor and pulse until finely chopped – do not overprocess into a paste.
2Transfer the chopped fish to a bowl. Add green onions, garlic, Panko breadcrumbs, salt, pepper, and parsley. Mix well and shape into patties with your hands.
3For a crispy coating: in a separate bowl, beat the eggs. In another bowl, place the cornmeal (or extra breadcrumbs). Dip each patty into the beaten eggs, then coat evenly with cornmeal.
4Preheat the air fryer to 200°C (400°F) for 5 minutes.
5Place the patties in the air fryer basket (you can use parchment paper). Lightly spray them with olive oil on top.
6Cook for 12-15 minutes, turning halfway and spraying again with oil, until golden and crispy.
7Serve immediately with lemon wedges and, if desired, tartar sauce.
