1Cut the potatoes into sticks (french fries). Boil them in salted water for 5 minutes, then drain and dry thoroughly with a clean kitchen towel.
2Place the potato sticks in the air fryer basket and cook at 120°C (250°F) for 15 minutes. Remove and let steam escape.
3In a bowl, marinate the chicken drumsticks with apple cider vinegar, tarragon, crushed garlic, salt, and pepper. Set aside.
4Cut the apples in half, remove the core, and wrap each half tightly in aluminum foil.
5Increase the air fryer temperature to 180°C (350°F). Place the marinated chicken drumsticks and foil-wrapped apples in the basket and cook for 5 minutes.
6Toss the pre-cooked potato sticks with a little oil, then add them back to the air fryer alongside the chicken and apples. Continue cooking for another 15 minutes, until everything is golden and crispy.
7Remove the foil from the apples and mash them into a chunky apple sauce. Serve alongside the chicken and fries.
8For the mayonnaise: whisk the egg yolk with mustard, a splash of apple cider vinegar, salt, and pepper. Slowly drizzle in the oil while whisking continuously until thick and emulsified.
