1Wash the mixed vegetables and cut them into uniform pieces. Dry them well with a clean towel.
2In a bowl, toss the vegetables with a thin layer of olive oil, salt, pepper, and any optional seasonings you like. Only a light coating of oil is needed.
3Preheat the air fryer to 180°C (350°F). Place the vegetables in the basket and cook for 15 minutes, shaking or stirring halfway through for even browning.
4Serve immediately, or top with a squeeze of lemon, fresh herbs, grated cheese, or your favorite sauce.
