Air Fryer Vegetable Fried Rice

🥘 Ingredients

cups cooked cold rice — 3 (720 ml)
sesame oil — 2 tbsp (30 ml)
chopped onion — 1 medium
small diced carrot — 1
cup frozen peas — 1/2 (120 ml)
cup frozen corn — 1/2 (120 ml)
beaten eggs — 2
soy sauce — 2 tbsp (30 ml)
minced garlic cloves — 2
teaspoon grated ginger — 1 (5 ml)
chopped green onions — 2
salt and pepper to taste

👨‍🍳 Steps

1Set the Air Fryer to Sauté mode at 190°C. Add sesame oil and cook onion, garlic, and ginger for 2 minutes, stirring frequently.
2Add carrot, frozen peas, and frozen corn. Cook for 3 minutes, stirring occasionally.
3Push vegetables to one side of the pot. Pour beaten eggs into the empty space and stir until fully set.
4Add cold cooked rice and soy sauce. Mix well, then cook for 4-5 minutes, stirring occasionally.
5Season with salt and pepper. Stir in chopped green onions.
6Serve hot.
