🥘 Ingredients

large bell peppers — 4
cup cooked rice — 1 (200g / 7 oz)
cup canned black beans, drained — 1/2 (100g / 3.5 oz)
cup frozen corn — 1/2 (100g / 3.5 oz)
cup canned diced tomatoes — 1/2 (120g / 4.2 oz)
cup shredded cheese (e.g., mozzarella) — 1/2 (50g / 1.8 oz)
teaspoon chili powder — 1
teaspoon ground cumin — 1/2
salt and pepper to taste
fresh parsley for garnish

👨‍🍳 Steps

1Cut the tops off the peppers and remove seeds. Preheat the air fryer to 190°C (375°F).
2In a bowl, mix cooked rice, black beans, frozen corn, diced tomatoes, half the shredded cheese, chili powder, cumin, salt, and pepper. Stir well.
3Stuff each pepper with the mixture, then put the top back on.
4Place stuffed peppers in the air fryer basket and cook at 190°C (375°F) for 20-25 minutes.
5About 2 minutes before the end, sprinkle remaining cheese on top.
6Garnish with fresh parsley and serve hot.
