🥘 Ingredients

root vegetables (carrots, celery root, parsnips) — 1 kg (2.2 lbs)
vegetable broth — 360 ml (1.5 cups)
cream cheese (Philadelphia Light) — 340 g (12 oz)
shredded cheddar cheese — 150 g (5.3 oz)
teaspoon dried basil — 1
teaspoon dried parsley — 1
teaspoon dried oregano — 1
salt and pepper to taste
(optional) cherry tomatoes for garnish

👨‍🍳 Steps

1Peel and dice the root vegetables. Place them in the steaming basket of the Ninja Foodi.
2Pour the vegetable broth into the pot and place the basket on top.
3Close the lid, set the valve to 'sealing', and pressure cook for 3 minutes.
4Quick release the pressure, remove the vegetables, and switch the appliance to Sauté mode.
5Add cream cheese, shredded cheddar, basil, parsley, and oregano. Stir until smooth and creamy.
6Transfer the vegetables to a serving dish, pour the cheese sauce over them, and garnish with cherry tomatoes and fresh basil if desired.
