Air Fryer Roasted Vegetables with Butternut Squash and Sweet Potato

🥘 Ingredients

butternut squash, cut into large chunks — 1 (about 500g / 1.1 lb)
sweet potato, cut into large chunks — 1 (about 300g / 10.6 oz)
red bell pepper, cut into large chunks — 1
red onions, each cut into 8 wedges — 2
new potatoes — 200g (7 oz)
2-4 garlic cloves, lightly crushed — 3
a few sprigs of fresh thyme — 4-5
tablespoon olive oil — 1

👨‍🍳 Steps

1Place all vegetables in the air fryer basket. Drizzle with olive oil, add thyme sprigs and crushed garlic cloves. Toss well to coat evenly.
2Cook at 200°C (400°F) for 20 minutes.
3Shake the basket again and continue cooking for another 10-20 minutes, until vegetables are tender and lightly golden.
