1Preheat the air fryer to 150°C (300°F) for 5 minutes.
2Pat the roast dry with paper towels. Mix the dry rub ingredients or use a pre-made one, then rub all over the meat. Apply a second layer for more flavor.
3Lift the roast and let excess rub fall off. Lightly spray the air fryer basket with nonstick cooking spray.
4Place the roast in the basket and cook for 25 minutes for medium-rare, 30 minutes for medium, or 35 minutes for well done (for a 1.3 kg roast). Remove when internal temperature is 3°C below desired, as it will continue to rise during rest.
5Remove the roast from the basket, cover with aluminum foil, and let rest for 15 minutes before slicing thinly against the grain.
6Check internal temperature: 54–57°C for medium-rare, 60–63°C for medium, 65–68°C for medium-well, above 68°C for well done.
