1Clean the rabbit of excess fat and connective tissue, then cut into serving pieces.
2Prepare the marinade: mix olive oil with minced garlic, lemon juice, dried thyme, salt and pepper.
3Place rabbit pieces in a Ziploc bag, pour marinade over, seal and refrigerate for at least 1 hour (up to 4 hours for more intense flavor).
4Preheat the air fryer to 190°C (375°F).
5Remove rabbit from marinade and let excess drip off. For a crispy exterior, optionally coat each piece first in flour, then beaten egg, then breadcrumbs or panko.
6Arrange rabbit pieces in a single layer in the air fryer basket without overlapping (work in batches if needed).
7Cook in the air fryer at 190°C (375°F) for 20-25 minutes, turning pieces halfway through.
8Check internal temperature in the thickest piece with a kitchen thermometer – it should reach 71-74°C (160-165°F).
9Remove rabbit from the air fryer and let rest for 5 minutes before serving.
