1Rinse the rabbit under cold water and pat dry with paper towels. Cut into serving pieces (legs, back, ribs).
2In a bowl, mix olive oil with garlic powder, onion powder, paprika, thyme, salt, and pepper.
3Add rabbit pieces to the bowl and toss to coat evenly with the spice mixture. Marinate for at least 30 minutes, ideally overnight in the refrigerator.
4Preheat the air fryer to 200°C (400°F).
5Place rabbit pieces in a single layer in the air fryer basket, without overlapping. Cook in batches if necessary.
6Air fry for 25–30 minutes, turning pieces halfway through, until golden brown and internal temperature reaches 71°C (160°F).
7Remove rabbit and let rest for 5–10 minutes before serving. Garnish with fresh herbs and serve with your favorite side.
