1Use pie pans that fit in your air fryer. I used a Ninja Air Fryer with two 7-inch (18 cm) pans, cooking one at a time.
2Prepare the crust: mix graham cracker crumbs with melted butter until the mixture holds together.
3Press the mixture into the pans and form the crust. Set aside.
4In a medium bowl, combine sugar, flour, pumpkin pie spice, and salt.
5Add pumpkin puree, eggs, and evaporated milk. Mix well.
6Pour half of the filling into each pan.
7If you have a basket-style air fryer, make a sling from aluminum foil to easily remove the pies.
8Cook in the Air Fryer (or use the Air Crisp function on Ninja Foodi) at 175°C (350°F) for 20-23 minutes. Check at 20 minutes; if the center is not set, cook for 3 more minutes.
9Carefully remove and let cool. Refrigerate until serving.
