pork shoulder (butt or picnic) — 2.5 lbs (1.1 kg)
teaspoon barbecue rub — 1
apple cider vinegar — 1/4 cup (60 ml)
unsalted butter — 4 tablespoons
barbecue sauce, to taste
grapeseed oil spray (or other neutral oil)

👨‍🍳 Steps

1Preheat the air fryer to 400°F (200°C) for 5 minutes.
2Season the pork shoulder evenly on all sides with the barbecue rub.
3Spray the air fryer basket with grapeseed oil.
4Place the meat in the air fryer and cook at 400°F (200°C) for 15 minutes to sear the outside.
5Prepare a sheet of aluminum foil. Remove the meat from the air fryer and place it on the foil.
6Bring up the edges of the foil around the meat, then place it back in the air fryer, ensuring space for air circulation.
7Pour the apple cider vinegar over the meat and add the butter on top.
8Cook at 320°F (160°C) for 30-40 minutes, until the internal temperature reaches about 194°F (90°C).
9Let the meat rest for 5 minutes.
10Using two forks or a shredding tool, shred the meat and mix with barbecue sauce to taste.
