1Peel and finely chop the yellow onion and garlic cloves.
2Drain and rinse the red and black beans.
3In a small bowl, mix 1 tsp cumin and 1 tsp paprika.
4Heat 2 tbsp olive oil in a skillet over medium heat and sauté onion and garlic until softened, about 3 minutes.
5Add beans, diced tomatoes, and the cumin-paprika mixture. Cook for 5 minutes, then lightly mash with a potato masher to thicken.
6Preheat the air fryer to 180°C (350°F).
7Spread the bean mixture evenly in an air fryer-safe dish.
8Make two small wells in the bean mixture and crack an egg into each.
9Sprinkle with chili flakes, paprika, and cumin.
10Place the dish in the air fryer and cook for 8-10 minutes, until eggs are done to your liking.
11While eggs cook, slice the avocado and chop the cilantro.
12Warm the tortillas in a dry skillet or microwave.
13Remove the dish from the air fryer. Top with avocado slices, crème fraîche, and cilantro.
14Serve huevos rancheros with warm tortillas and shredded cheese on the side.
