large flatbread — 1
boneless, skinless chicken thighs — 2
minced garlic — 1 tsp
dried mixed herbs — 1/2 tbsp
lemon juice — juice of 1/2 lemon
olive oil — 2 tbsp

large potatoes — 2
tomato — 1
red onion — 1/2
small bunch parsley — 1
Greek yogurt — 2 tbsp

👨‍🍳 Steps

1Marinate the chicken thighs with garlic, dried herbs, lemon juice, olive oil, salt, and pepper. Let it sit for at least 20 minutes.
2Cut the potatoes into 1 cm (½ inch) thick sticks. Toss them with a little olive oil, salt, and pepper.
3Place the potato sticks in one basket of the air fryer and thread the marinated chicken onto skewers in the other basket. Cook at 200°C (390°F) for 16 minutes, turning everything over halfway through.
4While the chicken and potatoes cook, make the tzatziki: combine Greek yogurt with grated cucumber (squeeze out excess water), a pinch of garlic, a squeeze of lemon juice, salt, and pepper.
5Toast the flatbread lightly. Spread tzatziki on it, then top with sliced chicken, crispy potatoes, sliced tomato, red onion, and fresh parsley. Roll up and serve immediately.
