green tomatoes, unripe and firm — 3-4 pieces
salt — 1/2 teaspoon
all-purpose flour — 1/2 cup (60g)
large eggs, beaten — 2 pieces
cornmeal — 1/3 cup (40g)
breadcrumbs (regular or panko) — 1/3 cup (30g)
paprika — 1/8 teaspoon
cayenne pepper (optional) — a pinch
cooking spray — as needed

👨‍🍳 Steps

1Slice the green tomatoes into rounds about 0.5 cm thick. Place them in a colander or on a tray, sprinkle generously with salt, and let them sit for at least 5 minutes to draw out excess water.
2Set up the breading station: put flour in one bowl, beaten eggs in another, and in a third bowl mix cornmeal, breadcrumbs, paprika, and cayenne (if using).
3Pat the tomato slices dry with paper towels to remove salt and moisture.
4Preheat the air fryer to 193°C (380°F).
5Coat each slice first in flour, then in egg, and finally in the cornmeal mixture, covering all sides.
6Place the breaded slices in the air fryer basket in a single layer without overlapping.
7Air fry for 7-9 minutes, turning halfway and spraying with oil, until golden and crispy.
8Serve immediately with your favorite dipping sauce, such as spicy mayo or ranch dressing.
