Air Fryer Eggplant with Garlic and Oregano

medium eggplant — 1 (about 1 lb)
olive oil — 2 tablespoons (30 ml)
salt — 1 teaspoon (5 g)
dried oregano — 1 teaspoon (2 g)
garlic powder — 1 teaspoon (3 g)
black pepper — a pinch

Wash the eggplant and slice into 1 cm thick rounds. Sprinkle with salt and let sit for 5 minutes to draw out excess water.

In a small bowl, mix olive oil with oregano, garlic powder, salt, and pepper.

Pat the eggplant slices dry with paper towels. Brush each slice on both sides with the oil and spice mixture.

Preheat the air fryer to 180°C (350°F).

Arrange the slices in a single layer in the air fryer basket. Cook for 12-15 minutes until golden and tender, flipping halfway through.
