1Let duck breasts come to room temperature for 30 minutes, then pat dry thoroughly with paper towels.
2Score the skin in a crosshatch pattern. In a small bowl, mix soy sauce, honey, lemon juice, and grated ginger. Place duck breasts in the marinade, turning to coat, and marinate for 30 minutes.
3Remove duck from marinade and season all sides with salt, black pepper, and garlic powder.
4Preheat air fryer to 200°C (400°F) for 3 minutes.
5Place duck breasts skin-side up in the air fryer basket. Cook for 10–15 minutes, checking internal temperature near the end.
6Recommended internal temperature: 74°C (165°F) for well done, or 57–63°C (135–145°F) for medium.
7Remove duck from air fryer and let rest for 5 minutes before slicing.
8Serve with steamed vegetables or a green salad.
