1Season chicken breasts with salt and pepper on both sides.
2In a bowl, mix breadcrumbs with grated Parmesan.
3Dip each chicken breast in beaten egg, then coat with breadcrumb mixture, pressing firmly.
4Preheat air fryer to 180°C (350°F) for 3 minutes.
5Lightly spray breaded chicken with olive oil spray.
6Place chicken in air fryer basket in a single layer. Cook at 180°C (350°F) for 10 minutes.
7Flip chicken, add a spoonful of tomato sauce on each piece and sprinkle shredded mozzarella on top.
8Return to air fryer and cook for another 5-7 minutes until cheese is melted and golden.
9Serve immediately with a green salad or pasta.
