Ingredients:

  • 4 eggs, beaten;
  • 8 oz sausage, cooked and crumbled;
  • 1/2 cup Monterey Jack cheese, grated;
  • 2 tbsp bacon, crumbled and crispy;
  • 1/2 green pepper, finely diced;
  • 1/4 cup cheddar cheese, shredded, plus more for topping;
  • 1 large (12″) flour tortilla;
  • Cooking spray, vegetable oil-based;
  • Toppings: Tomato, avocado, spring onion, lime wedges, coriander (cilantro).

Instructions:

  1. In a large mixing bowl, whisk together beaten eggs, crumbled sausage, diced green pepper, crispy bacon, Monterey Jack cheese, and half of the shredded cheddar cheese.
