  • 100g (3.5oz) raspberries;
  • ½ tsp vanilla;
  • 4 tbsp buttermilk;
  • 1 egg, beaten;
  • 30g (1oz) butter;
  • ½ tsp salt;
  • ½ tsp baking soda;
  • 1½ tsp baking powder;
  • 4 tbsp sugar, divided;
  • 125g (4.4oz) plain flour.

Instructions:

  1. In a large mixing bowl, combine the plain flour, 2 tablespoons of sugar, baking powder, baking soda, and salt.
  2. Add the butter, using a pastry blender or two forks, until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the beaten egg, buttermilk, and vanilla.
  4. Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  5. Fold in the raspberries carefully to avoid breaking them too much.
