Ingredients:

  • 420 g (14.8 oz) tinned pink salmon, drained; any bones and skin removed;
  • ½ cup (45 g) panko breadcrumbs;
  • 2 tbsp chopped dill;
  • 2 tbsp mayonnaise;
  • 1 tbsp Dijon mustard;
  • ½ tsp ground black pepper;
  • 1 egg;
  • Vegetable oil cooking spray;
  • Garnishes: sour cream, lemon slices, dill sprigs.

Instructions:

  1. In a large bowl, add drained salmon, panko, dill, mayonnaise, Dijon, pepper, and egg. Stir gently to combine.
  2. Shape the mixture into two 15 cm (6”) patties.
  3. Spray the patties with cooking spray.
  4. Place the patties in an air fryer basket or racks and cook at 400°F for 10-12 minutes or until the internal temperature reads 145°F.
  5. Remove from the air fryer and serve with sour cream, lemon slices, and dill sprigs if desired.
