  • Cooked rice;
  • 1 tsp sesame seeds;
  • 3 spring onions, sliced, divided;
  • 2½cm | 1” piece ginger, finely chopped;
  • 2 tbsp vegetable oil;
  • 2 tsp rice vinegar;
  • 2 tbsp soy sauce;
  • 2 tbsp ketchup;
  • 6 tbsp chicken stock;
  • ½ tsp salt;
  • 45g | 1.5oz | ¼ cup plus 2 tsp cornflour, divided;
  • 450g | 1lb boneless, skinless chicken breasts, cubed;
  • 1 egg.

Instructions:

  1. In a large bowl, beat egg; add chicken. In a separate large bowl, mix ¼ cup cornflour, salt, and pepper. Add chicken to cornflour mixture to coat.
  2. Place chicken pieces in air fryer basket or racks. Cook at 205°C (400°F) for 15 minutes, shaking halfway through.
  3. Meanwhile, whisk together remaining 2 tsp cornflour with stock, soy sauce, ketchup, and vinegar.
  4. Heat oil in a large frying pan; cook ginger and garlic for 1 minute. Add chicken in cornflour-soy-stock mixture; cook until thickened. Add chicken and heat through. Stir in half the spring onions and the sesame seeds.
  5. Serve over rice; garnish with remaining spring onions.
