  • 6 (15cm / 6″) flour tortillas;
  • Vegetable oil cooking spray;
  • 4x (115g / 4oz) boneless cod or haliibut fillets;
  • Salt and ground black pepper;
  • 1 tsp salt;
  • 1 tbsp cumin;
  • 2 tsp chili powder;
  • 190g (6.7oz / 1½ cups) cornflour;
  • 2 eggs;
  • 300ml (10floz / 1¼ cups beer).

Instructions:

  1. Prepare two shallow bowls for the batter. In the first bowl, whisk together the eggs and beer. In the second bowl, mix the cornflour, flour, chili powder, cumin, salt, and pepper.
  2. Dip each fish fillet into the egg mixture, then dredge in the flour mixture to coat thoroughly.
