How to make Air Fryer Cheese, Bacon and Egg Pockets

Ingredients:

  • Parsley leaves and chopped spring onions, for garnish;
  • 60g (2oz) grated cheddar cheese;
  • 60g (2oz) crumbled crispy bacon;
  • 50g (2oz) cooked sausage meat;
  • 5 eggs, scrambled;
  • 500g (17.6oz) ready-rolled puff pastry;
  • Vegetable oil cooking spray.

Instructions:

  1. Roll out the puff pastry and cut it into 12 equal rectangles on a lightly floured surface.
  2. In a large bowl, mix together the scrambled eggs, cooked sausage meat, crispy bacon, and cheddar cheese.
  3. Spoon the egg mixture onto 6 of the pastry rectangles.
  4. Top each filled rectangle with another piece of pastry. Press the edges together with a fork to seal and prevent leaking.
  5. Spray each pocket lightly with cooking spray. Place in an air fryer basket or on racks and cook at 375°F for about 8-10 minutes or until golden brown and puffed.
  6. Garnish with chopped spring onions and parsley leaves. Serve warm.
