How to make Air Fryer Prawn Spring Rolls

Ingredients:

  • 3 tbsp sesame oil, divided;
  • 140 g (5 oz) shredded cabbage;
  • 120 g (4.2 oz) julienne-cut red pepper;
  • 130 g (4.5 oz) matchstick carrots;
  • 115 g (4 oz) raw prawns, peeled, deveined, and chopped;
  • 120 g (4.2 oz) julienne-cut mangetout;
  • 5 g (0.2 oz) chopped coriander;
  • 1 tbsp lime juice;
  • ¼ tsp chili flakes;
  • 8 spring roll wrappers (20 cm / 8” square);
  • Sweet chili sauce.

Instructions:

  1. Heat 1 tbsp sesame oil in a large frying pan over high heat. Add cabbage, peppers, and carrots. Cook until slightly wilted, about 1 minute. Let cool.
  2. Transfer the cabbage mixture to a large bowl; add prawns, mangetout, coriander, lime juice, and chili flakes.
  3. Place wrappers on a work surface with a corner facing you. Spread 4 tbsp filling in the middle of each wrapper, spreading from left to right into a 7.5 cm (3”) wide strip. Fold the bottom corners over filling, tuck the tip under the filling, and fold the left and right corners over the filling. Lightly brush the remaining corner with water and tightly roll the filled end toward the remaining corner; press gently to seal.
  4. Brush rolls with the remaining 2 tbsp sesame oil.
  5. Put rolls in the air fryer basket or racks; cook at 390°F, turning after 5 minutes, until golden, about 7 minutes in total.
  6. Serve warm with sweet chili sauce or other dipping sauce.
