  • 90g | 3oz | 4 tbsp grated mozzarella cheese
  • 30g | 1oz | 4 tbsp grated Parmesan cheese
  • ¼ tsp ground black pepper
  • ½ tsp salt
  • 25g | 0.9oz | 4 tbsp plain breadcrumbs
  • 100g | 3.5oz | ½ cup cooked rice
  • 340g | 12oz turkey mince
  • 3 large orange peppers
  • 2 tbsp olive oil
  • 3 tbsp chopped parsley
  • 3 tbsp marinara sauce

Instructions:

  1. Coat an air fryer basket or rack with cooking spray.
  2. Prepare peppers: Cut off stem ends, cut in half lengthwise, and remove seeds.
  3. In a large frying pan, heat oil over medium-high heat. Add turkey; cook until brown, about 5 minutes. Stir in rice and breadcrumbs; cook for 1 minute.
  4. Remove from heat; stir in marinara, parsley, salt, pepper, and Parmesan. Divide mixture among pepper halves.
  5. Arrange peppers in air fryer basket or rack. Cook at 175°C (350°F) for 8 minutes, or until tender.
