Ingredients:

– 3 tbsp sesame oil, divided; – 140 g (5 oz) shredded cabbage; – 120 g (4.2 oz) julienne-cut red pepper; – 130 g (4.5 oz) matchstick carrots; – 115 g (4 oz) raw prawns, peeled, deveined, and chopped; – 120 g (4.2 oz) julienne-cut mangetout;

– 5 g (0.2 oz) chopped coriander; – 1 tbsp lime juice; – ¼ tsp chili flakes; – 8 spring roll wrappers (20 cm / 8” square); – Sweet chili sauce.

1. Heat 1 tbsp sesame oil in a large frying pan over high heat. Add cabbage, peppers, and carrots. Cook until slightly wilted, about 1 minute. Let cool. 2. Transfer the cabbage mixture to a large bowl; add prawns, mangetout, coriander, lime juice, and chili flakes.
